We develop and produce cultures, enzymes and probiotics for the dairy industry in particular and for the food industry in general — eg for wine and meat. Our ingredients determine taste, appearance, nutritional value and health benefits. We are the global market leader in dairy ingredients. Actually… every other cheese in the world contains our enzymes.

healthyfitmom.com There are many tasty ways that you can add probiotics and enzymes to your diet. This kind of method is an ancient way of preserving your food and was done before the invention of refrigerators. By adding whey to your food and letting it sit out at room temperature, allows the food digestion process to start before it even reaches your mouth. The enzymes, lactic acid and beneficial bacteria created during this process ease the strain on the pancreas which is the part of our body that secretes pancreatic juices and digestive enzymes to the small intestine. en.wikipedia.org Lacto-fermentation helps heal the digestive system by reintroducing beneficial bacteria and discourages the growth of the bad bacteria and pathogenic yeasts. Lacto-fermented foods are crucial for healing from Candida Yeasts. In this video I show a wide range of lacto-fermented foods, from homemade mustard, salsa, pickles, sauerkraut, and the makings of fermented milk. My grandfather is 95 years old and still lives in his own home. Every day with his meals he drinks a cup of soured milk or Kefir. He cares for my grandmother who just had her 89th birthday. I strongly believe in the relationship between dietary enzymes and good bacteria with good health and longevity.

The Mongolians I had met at Dave’s Pub the night before had painted an ideal imagery of Terelj National Park, so I was naturally excited to escape from the bustling capital for a while. We drove on the national highway to the park. The highway was essentially a one lane country road with potholes and bumps. On the outskirts of the capital city, we stopped at a Ger camp. Nemo, our native fearless tour guide, went inside the camp to purchase a drink unique to Mongolia and Central Asia: Airag, which was mare’s milk. The was milk obtained by a farming nomadic family from a horse, then fermented with bacteria and yeast to produce lactic acid and 18% alcohol. Nemo passed the milk bottle around for everyone to taste. After having horse meat last night, what better way to wash down the taste than with mare’s fermented milk, I thought. I hesitantly opened the bottle cap and took a sniff. Immediately, an acrid smell permeated through my nostrils. I slowly poured the airag into a cup and with one big gulp, I swallowed the slightly dense content. Airag tasted very much like sour
