This recipe shows a downgraded version with ingredients easily available in any supermarket. Ingredients: – 2 cups bread flour – 1 cup sour milk – 1 teaspoon instant yeast (can be substituted with 1 ts baking powder) – 1/2 ts salt – 400g cheese (combination of mozzarella and any other cheese that melts well, 40/60) – 1 egg – Butter to grease bread to prevent crust Fry on preheated heavy skillet on medium heat for 5 minutes on each side, then grease with butter and cover with cloth to keep from drying. Yields two khachapuris. You can eat it hot or cold. The only reason I was using lids was to measure flatbread size because I was using different skillets :) And you don’t really need a rolling pin, you can do everything by hands in less than a minute! (Hint: Try different kinds of cheese or add fresh coriander to the filling!)
